
Serves 4-6 starters.
Ingredients list :
220g peeled brown shrimp
115g unsalted butter
10g finely diced shallots
3g chopped dill
5g chopped parsley
Zest of 1/2 a lemon
lemon juice to taste
salt and pepper to taste
Worcestershire sauce to taste
100g clarified butter
How to make it :
- Melt the butter.
- Squeeze any excess water out of the shrimps, discarding the water afterwards.
- In a pan, take a bit of the melted butter and cook the shallots, being careful not to cook any colour onto them. Remove from the pan and leave to cool down.
- In a mixing bowl mix the rest of the ingredients together. Once combined, taste the mix and re-adjust the seasoning ( including the lemon juice and Worcestershire sauce) to your taste.
- Press the shrimp into small to medium sized ramekins leaving a small gap at the top for sealing them.
- Set in a fridge. When set, pour the clarified butter over the top of the shrimps and return to the fridge.
- Remove from the fridge approx. 1-2 hours before serving. This will make the shrimp easy to spread on some nice fresh toast. Try serving it with the hot toast, and a nice crisp salad. Delicious!
